A vineyard selection of Tsolikouri made by the young woman winemaker Baia Abuladze and her sister Gvantsa along with her brother Giorgi. This is the only white wine in Baia's portfolio currently imported fermented in qvevri. The west of Georgia in general is much more humid and so the indigenous varieties all tend to have higher acidity to survive the climate. Tsolikouri is the most planted in Imereti and so too with Baia. All the fruit is estate grown in form one vineyard in the village of Obcha, hand picked and hand sorted. After destemming the wine is pressed and put into qvevri with partial skins and fermentation starts spontaneously.
The result is a wine with wonderful aromas of honey, citrus and a touch of cider notes followed by a refreshing crispness that finishes with just slight tannin and great minerality. A great introduction to a skin contact style.
